Eggless mango pudding -this recipe is perfect for those who prefer a creamy and fruity treat without the use of eggs. This eggless mango pudding is not only delicious but also visually appealing.

There are so many varieties of pudding, like vanilla, chocolate, coconut, and many more. But among these, mango pudding is my all-time favorite. I thought I should share this recipe with you so that you can enjoy it.

Pudding is believed to have originated in Europe, specifically in England. The word “pudding” originally referred to a savory dish similar to a sausage made by combining various ingredients such as meat, egg, grains, and spices. Over time, sweet variations of pudding emerged, incorporating ingredients like milk, sugar, and fruits.

Essential ingredients you need

2 ripe Alphonso mango

1/2 cup sugar (adjust according to taste)

1/4 cup corn flour

2 cups of milk

a pinch of salt

1 lemon

chopped ripe mangoes for garnish (optional)

fresh mint for garnish (optional)

Let’s see how to make it.

Step 1: You have to Peel the Alphonso mangoes, remove the flesh and roughly chop them, then transfer them to a blender jar.

Step 2: Add some sugar to the blender jar with the mangoes. and blend to a fine paste.

Step 3: In a separate bowl, mix the corn flour with 1/2 cup of milk until well combined and there are no lumps.

Step 4: Heat a deep pan on the stove. Add the blended jar and the remaining 1.5 cups of milk to the pan. stir to combine.

Step 5: Cook the mixture over medium heat, and cook until the mixture comes to a boil. this should take about 5-7 minutes.

Step 6:Ones the mixture is boiling, add the salt and continue stirring for another 2 to 3 minutes to ensure there are no lumps and the pudding thickens slightly.

Step 7: Remove the pan from the heat and let it cool for a few minutes. then, add the lemon juice and mix well.

Step 8: Transfer the mixture into individual serving bowls or molds. Allow the pudding to cool completely at room temperature.

Step 9: Once cooled, cover the bowls or molds with plastic wrap and refrigerate for at least 4-6 hours, or until the pudding sets.

Step 10: When ready to serve, gently de-mold the pudding onto serving plates. you can garnish with chopped mangoes and mint springs if desired. Serve the eggless mango pudding chilled and enjoy!
