Bamboo shoot curry is Northeastern cuisine and have been a part of the Indian diet for centuries. Particulalry in the states of the country, including Assam, Arunachal Pradesh, Manipur, Mizoram, Nagaland, Tripura and Sikkim.
Bamboo shoots contain proteins, carbohydrates, vitamins, fibers, and minerals, and they have very low fat content, making them one of the healthy foods.
People also know bamboo shoots curry as Tama Curry. To remove the bitterness of bamboo shoots, simply add them to turmeric water and boil for 10 to 15 minutes. Once done, they are ready to be consumed.
How to make Bamboo shoot curry:-
INGREDIENTS:-
- 2 cups of fresh bamboo shoots
- 1 large onion, finely chopped
- 2 tomatoes, chopped
- 2-3 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh cilantro leaves for garnish
- Water as needed
INSTRUCTIONS:
- Prepare Bamboo Shoots: If using fresh bamboo shoots , peel off the outer layers until you reach the tender inner part. Cut them into small pieces and boil them in water for about 10-15 minutes or until they are tender. Drain and set aside.
- Cooking Base:
- Heat oil in a pan over medium heat. Add chopped onions and saute until they turn translucent.
- Add Aromatics:
- Add ginger-garlic paste and green chilies. Saute for another couple of minutes until the raw smell disappears.
- Spice it up:
- Add turmeric powder, cumin powder, coriander powder, and red chili powder. Mix well and sauté for a minute to toast the spices.
- Incorporate Tomatoes:
- Add chopped tomatoes to the pan. Cook until they turn soft and mushy, and the oil begins to separate from the masala.
- Add Bamboo Shoots:
- Once you have cooked the masala, add the boiled bamboo shoots to the pan. Stir well to coat them with the masala.
- Simmer:
- Add a little water if the mixture is too dry. Season with salt according to your taste. Cover the pan and let the curry simmer for about 8-10 minutes on low heat to allow the flavors to meld together.
- Final Touch:
- Once you cook the bamboo shoots through and your curry reaches your desired consistency, sprinkle Garam masala over the curry and give it a final stir.
- Garnish and Serve:
- Garnish fresh Coriander leaves on top of the bamboo shoot curry. Serve hot with steamed rice or your choice of bread.
