Preparing Mutton Trotters (Mutton Paya)

image of hair removed raw mutton paya

This is the most difficult part of this mutton paya soup recipe. Either you ask the butcher to remove the hair or do it by yourself. If you ask the butcher, he may charge some extra money for it. But if you want to do it by yourself follow my guide

Some says that after cleaning it you have to boil it and then start removing the hair by rubbing the knife. But if you do so you may loose the skin and some flesh.

Instead You need to prepare some boiling water and maintain its temperature. After cleaning the Mutton Trotters you dip it for a short time in the boiling water, remove it and start removing the hair by rubbing the knife.

In this way the hair get detached from its root and get separated but still some hair remains. To completely remove the hair, you have to slightly burn it to make the hair burn but not the skin.

Preparation Process

Step 1

Take a pressure cooker and place it on a medium flame. Pour a table spoon clarified butter(Ghee). You can use butter or re-fined oil to cook.

Then put 1 Dry Bay leaf, 10 to 12 pepper, 1 Small piece of Cinnamon, 5 Small Cardamom, 2 black cardamom, 5 Clove. Fry it for some time to release the flavor of the spice to mix with clarified butter(ghee).

Step 2

Now add the ginger, garlic and green chili pieces and chopped onion. Fry it for a minute or till the color slightly changes. After that add mutton paya to it. Fry it for a short time and then add 1/2 table spoon salt and 1/3 turmeric powder.

Add water to it. The water should be 4 time of the amount of paya. We have taken 250 gram of paya, so we add 1 liter of water to it.

Step 3

Now close the cover of the pressure cooker and make the flame high. After one whistle cook it for 30 minute or 35. After it don’t release the pressure, just turn of the flame and let the decrease for it self.

The soup is ready to be served. You gave to filter it to a bowel using a stainless steel juice filter and separate the spice leaf and some undissolved spices. Add 1 teaspoon pepper powder and come green coriander leaves and mix it well. Now add the paya to the soup and enjoy.

Tips and Tricks

  1. Choose Quality Ingredients: Use fresh, tender mutton paya (trotters) for the best flavor. Ensure the meat is cleaned properly.
  2. Marination: Marinate the mutton paya with ginger-garlic paste, turmeric powder, red chili powder, and salt for a few hours or overnight. This enhances the flavor and tenderness.
  3. Use Pressure Cooker: Cooking mutton paya can take a long time. Using a pressure cooker can significantly reduce cooking time while ensuring the meat becomes tender.
  4. Slow Cooking: If you prefer traditional methods, slow-cook the paya to extract maximum flavors. This can take a few hours, but the result is worth it.
  5. Spices and Aromatics: Use a blend of spices like cumin seeds, coriander powder, garam masala, and whole spices (like cloves, cardamom, and bay leaves) to enhance the soup’s flavor.
  6. Add Vegetables: You can add diced vegetables like onions, tomatoes, and green chilies for additional flavor and nutrition.
  7. Bone Broth: The trotters are rich in collagen, which gives the soup a rich texture. Simmering them for a longer time extracts the nutrients effectively.
