After 15 minutes Pour hot water (about 2 cups) to cover the duck pieces. Then add the potatoes or ash gourd if using, then cover it & let it simmer for 45 minutes to 1 hour, stirring occasionally, check if the meat is tender & gravy has thickened..

Taste for seasoning and adjust salt or black pepper as needed. Garnish with freshly crushed black pepper for an extra punch of flavor, Then Serve hot with plain steamed rice.
