The Mughlai biriyani originated in the kitchen of the nawab, made with a perfectly spiced chicken chunk, along with long grain basmati rice, a generous amount of curd, almond paste, ghee, fiery green chili, and dry fruits. It’s known for its rich flavor.

2.Hyderabadi Biriyani

One of the most famous dishes is Hyderabadi biriyani. It has made with goat meat marinated and placed between layers of basmati rice flavored with saffron, fried onion, and dry fruits. Slowly cooked or “Dum” in a dough-sealed pot on a charcoal fire. So it’s called Dum biriyani.

3.Kolkata Biriyani

It was introduced by the Awadh family in 1856, The biriyani was reinvented in Kolkata, It has made with a yogurt-based marinated meat along with yellow basmati rice, by the unique presence of potato, along with meat and egg in it, it’s basically introduced for poor people.

4.Lucknawi biriyani

It is originated in Lucknow and also known as pukki biriyani, where meat and rice cooked separately, then there is a repeated layer of rice- meat-rice in a heavy bottom copper vessel which is sealed with dough on a low flame. This process we called Dum biriyani.

5.Tehari Biriyani

Tehari biriyani is mainly made for the Hindu bookkeeper of the Muslim nawab. It’s mainly considered a pulao, which is prepared with potatoes carrots, and other vegetables as well. Tehari biriyani is basically used in world-war ll when the meat prices increased and the potatoes become the popular substitute in biriyani
