A year before I was a person who would easily chose outside food over homemade breakfast or food. During lockdown period after spending a lot of time at home, I realized how my mother cooked each food with lots of patience and love. It gave me a direction to maintain a healthy lifestyle. It took me a long time to understand this change. When you know what exactly in your food, you can get a different level of satisfaction. Below are some of the recipes my mother taught me.

1.MAIDA PITHA(DESI PANCAKE)

Maida Pitha(Easy homemade recipes)
MAIDA PITHA

Ingredients for Maida Pitha:

  • Maida(all purpose flour)-1 cup
  • Oil(refined or mustard)-1 tbsp
  • Salt-as per taste
  • Curd or milk(vegetarian)-half cup OR Egg-1(non-vegetarian)
  • Water for the batter as needed

Optional Ingredients: If you have more than 5 mins, go for this option.

  • Curry leaves
  • Ginger-1 tsp finely chopped
  • Onion-1 small finely chopped
  • Green chilly-1 tsp finely chopped
  • Carrot-1/4th cup finely chopped

Steps to prepare Maida Pitha:

  1. In a mixing bowl or any utensil you are comfortable with, add flour, salt and water.
  2. Mix in the onions, carrots, green chillies(optional).Gradually mix egg or curd/milk to get a pancake or dosa consistensy.
  3. Heat a pan(tawa) on a medium flame, spread 1 tbsp oil and pour 2 laddle full of batter and spread it out into a circle like a dosa.
  4. After 2 mins flip it upside down, and let the second side cook .Watch for another 2 mins.
  5. When turns little golden brown, remove and continue with the rest of the batter.
    Enjoy it just like that or serve with hot chutney or sauce of your choice.

2.POHA (CHUDA UPMA)

Ingredients:

  • Poha(flattened rice flakes)-1 1/2 cup
  • Turmeric powder-1/2 tsp
  • Mustard seeds-1/2 tsp
  • Cumin seeds-1/2tsp
  • Curry leaves-10-12
  • Oil-1 1/2 tbsp
  • Onion-1 medium finely chopped

Optional ingredients:

  • Green chilly-1/2 tsp
  • Potato-1 medium chopped
  • Peanuts-1 tsp
  • Tomato-1 medium chopped
  • Beans-4 to 5 chopped
  • Carrot-1/4th cup chopped

Toppings for our Poha:

  • Sev
  • Pomegranate seeds
  • Grated coconut
  • Coriander leaves
  • Lemon juice

Steps to prepare Poha:

  1. Heat a pan with oil, add mustard and cumin seeds, curry leaves. Let them splutter.
  2. Add peanuts, roast for a min. Add chopped onion and other vegetables as per your choice. Saute for 2 mins.
  3. Add turmeric powder and salt. Cover the pan and cook on a low heat until the vegetables are soft cooked.
  4. Meanwhile, clean poha twice with clean water but be careful, it shouldn’t turn too mushy. Drain the water and keep in a bowl or any container. Leave it for 5-7 mins to absorb water.
  5. Once the vegetables are cooked thoroughly, add softened poha and mix well. Keep flame on low at this stage and stir for a min.
  6. Take it off the heat. Add toppings as per your choice or have it like that.
    Note: If you feel poha becomes too dry after adding it to the vegetables, sprinkle some water and mix well before taking off the heat.

3.ALOO-TIKKI(PATTIES) CHAT

Ingredients:

For Patties
  • Boiled potatoes-2 large
  • Coriander powder-1 tsp
  • Cumin powder-1 tsp
  • Salt-as per taste
  • Oil-1 tbsp

Step-1

⦁ Wash the potatoes properly and pressure cook for 7-8 mins. Let the pressure release naturally and check for the softness.
⦁ Peel and mash potatoes in a bowl or any container, add coriander and cumin powder, salt. Mix well. Prepare patties. Give any shape you like. Spread oil on a pan(tawa) to shallow fry patties. Cook until golden brown.

For green chutney
  • Mint leaves-half cup
  • Coriander leaves-half cup
  • Ginger-half inch
  • Garlic-2 cloves
  • Green chilly-1
  • Lemon-1 tbsp
  • Salt-1/2 tsp
  • Water-2 tbsp

Step-2

  • Grind the ingredients in a mixer or food processor until smooth puree.
For Khati-Mithii chutney
  • Jaggery-1/2 CUP
  • Tamarind(imli)-1/2 cup
  • Cumin seeds-1 /2 tsp
  • Chilly powder-1/2 tsp
  • Oil-1 tsp

Step-3

  • Soak tamarind in water for 10-15 mins. Boil for sometime and strain the pulp and keep aside. Heat oil, fry the cumin seeds and add chilly powder. Mix well and add the tamarind water and pulp. Cook for 4-5 mins. Add the jaggery and salt. Simmer for 4-5 mins until the consistency thickens.

Optional Toppings for our Chatpata Chat:

  • Tomato-1 small
  • Onion-1 small
  • Coriander leaves-handful
  • Sev-handful
  • Chat masala-1 tbsp
  • Cumin powder-1 tsp
  • Pomegranate seeds-as per requirement
  • Curd-as per requirement
  • Black salt- a pinch

Step-4

  • Place Patties in a plate or bowl or any container of your choice. Sprinkle black salt or chat powder over the patties. Spread curd and chutneys. Top with onion, tomato, coriander leaves, sev, pomegranate seeds(optional).

4.VEG CHOWMEIN

Ingredients:

  • Noodles-2 cake
  • Salt-as per taste
  • Oil-2 tbsp
  • Garlic-3 to 4 cloves
  • Tomato & chilly-1 tbsp each
  • Soya sauce-1 tsp (1/2 tsp if dark)
  • Black pepper powder-1/2 tsp

Optional Vegetables:

  • Cabbage-1 cup
  • Onion-1 large
  • Beans-4-5
  • Carrot-1/3rd cup
  • Beet-1/3rd cup
  • Capsicum-1/3rd cup

Steps to prepare Veg Chowmin:

  1. Boil noodles in 6 cups of water with a teaspoon of salt and oil. After properly cooked, drain the hot water and rinse it under running or cold water. Add 1/2 tsp oil to the noodles and toss them well to get rid of stickiness. Cover and keep aside.
  2. Heat oil in a pan. Add garlic and all vegetables. Saute for a minute. High the flame and stir occasionally until vegetables are cooked. I like my vegetables crunchy, so I cook them for 5 mins on high flame. You can cook as per choice.
  3. After vegetables are cooked, lower the flame and put the noodles. Mix well.
  4. Add sauces and black pepper powder. High the flame for a minute and mix everything well. Turn off the heat.
  5. Garnish with corriander leaves or chopped onion or cabbage.

4.DHOKLA

Ingredients:

  • Gram flour-1.5 cups
  • Turmeric powder-2 pinch
  • Lemon juice-1tbsp or Eno-1/2tsp or Baking soda-1/4 tsp
  • Ginger and chilly paste-1/2 tsp
  • Sugar-1 tbsp
  • Salt-1 tsp
  • Oil-1 tbsp
  • Water-1 cup
For Tadka
  • Mustard seeds-1 tsp
  • Curry leaves-10 to 15
  • Sugar-2 tsp
  • Green chillies-1/2 tsp
  • Oil-2 tbsp
  • Water-1/2 cup

Note:

  • Adding turmeric powder may cause the batter to turn red colour while steaming. Add a pinch or skip it properly.
  • The water should be boiling or hot when you place the pan with the batter. When using a pressure cooker, remove the vent weight/whistle from the lid and cover the cooker tightly with its lid.

Steps to prepare Dhokla:

  1. Grease a steamer pan with oil.
  2. Mix all the ingredients well except baking soda/Eno. Add water and stir well to combine. Make a smooth flowing batter without any lumps.
  3. Now add baking soda to the batter and mix well again. At this stage, do not leave the batter for a long time and pour it into greased pan.
  4. Gently shake to even out the batter. Place the pan in steamer or electric rice cooker or pressure cooker.
  5. Steam for 15-20 mins. To check the doneness, insert a toothpick. If toothpick come out clean, it is done else need to steam for another few minutes.
  6. Let it cool completely. Slice it in squares and set aside until ready to use.
  7. Now, it’s time for tempering our Dhokla. Heat oil in a tadka or small pan. Add mustard seeds and allow them to crackle. Add curry leaves and chopped green chillies. Fry for some time. Add water and 2 tsp of sugar. Stir and allow to boil once.
  8. Remove from heat and pour immediately into the dhokla. Slice it and garnish with coriander leaves or grated coconut.
