Ingredients Of Puran Poli :

  • 1 cup chana dal (split Bengal gram lentils)
  • 1 cup jaggery (or sugar)
  • 1 cup whole wheat flour
  • 2 tablespoons ghee (clarified butter)
  • 1/2 teaspoon cardamom powder
  • 1/4 teaspoon nutmeg powder
  • A pinch of salt
  • Water, as needed

How to Make Puran Poli

To make Puran Poli, prepare a sweet lentil filling, stuff it into dough, then cook.

1. Prepare the Filling (Puran)

  • Rinse the chana dal thoroughly and soak it in water for about 1-2 hours.
  • Drain the soaked dal and cook it in a pressure cooker or saucepan with enough water until it becomes soft and mushy. Drain any excess water.
  • Transfer the cooked dal to a pan, add jaggery (or sugar), cardamom powder, nutmeg powder, and a tablespoon of ghee.
  • Cook the mixture on medium heat, stirring continuously, until it thickens and forms a smooth consistency. This is the puran (filling) for the Puran Poli. Allow it to cool.

2. Prepare the Dough

  • In a mixing bowl, combine the whole wheat flour, a pinch of salt, and a tablespoon of ghee.
  • Gradually add water and knead the mixture into a soft, pliable dough. Cover the dough and let it rest for about 15-20 minutes.
3. Make the Puran Poli

  • Divide the dough into small balls, slightly smaller than the puran balls.
  • Take one dough ball and flatten it into a small disk. Place a portion of the puran filling in the center.
  • Enclose the filling by bringing the edges of the dough together and sealing them.
  • Roll out the stuffed dough ball into a circle, using a rolling pin and a little dry flour to prevent sticking.
  • Heat a griddle or a flat pan over medium heat. Place the rolled Puran Poli on the hot griddle.
  • Cook on both sides until golden brown spots appear, brushing each side with ghee while cooking.
  • Repeat the process with the remaining dough and puran filling to make more Puran Polis.
4. Serve
  • Serve hot Puran Polis with a dollop of ghee or with some yogurt on the side.
