INGREDIENTS :-
  1. 1 cup cooked rice
  2. 2 cups water
  3. 4 tbsp curd
  4. To taste Salt as per taste
  5. 1 tsp oil
  6. 1/2 tsp Panchforan
  7. 1 pinch asaefotida
  8. 7-8 curry leaves
  9. 2 whole dry chilli
METHOD FOR PREPARATION :-
  • Add 1 bowl of cooked rice with 2 bowls of water and allow it to cool.
  • Put a pan medium flame.
  • Once it is hot than add 1 tbsp oil.
  • Add curry leaves, mustard seeds and dry chillis.
  • Now simmer the flame and add 1 cup water.
  • Allow it to cool
  • Add everything with curd, smashed ginger and salt to the bowl containing rice and water
  • Mix well , and ready to serve.

INGREDIENTS :-
  1. 2 litre milk
  2. 2 tbsp lemon juice
  3. ¼ cup sugar
  4. 2 tbsp semolina, fine
  5. 3 tbsp water
  6. 1 tsp clarified butter
  7. 5 almonds, chopped
  8. 5 cashew, chopped
  9. 2 tbsp raisins
  10. ¼ tsp cardamom powder
METHOD FOR PREPARATION :-
  • you can use store brought paneer weighing 250 grams,Take the paneer into a large mixing bowl.
  • Mash slightly, making sure the texture is uniform.
  • Further, add ¼ cup sugar and 2 tbsp rava.
  • Mix well until the sugar melts completely.
  • Add water or as required and prepare a smooth cake batter consistency.
  • Mix for atleast 5 minutes.
  • Add 1tsp ghee,5 badam,5 cashew,2tbsp raisins and ¼ tbsp cardamom powder.
  • Now in a small vessel grease with ghee and place a butter paper.
  • Transfer the chenna poda batter into the mould and tap twice.
  • To prepare chenna poda in a pressure cooker add in 1½ cup salt and place a small cup or cooker rack.place a stand above it.
  • Close the lid of cooker without keeping the gasket and whistle. heat for 5 to 10 minutes.
  • Place the batter tin into cooker.
  • Now cover and cook on medium flame for 25 minutes.
  • Once the chenna poda is cooled completely, scrape from sides and cut.
  • Finally, chhena poda is ready to serve.

  1. 250 gms potatoes, chopped
  2. 100 gms raw papaya, chopped
  3. 3 brinjals
  4. Water, little bit

  7. Ginger, small whole piece
  8. 1/2 Tbsp coriander powder
  9. 2 Tbsp refined oil
  10. 1 onion, sliced
  11. 2 pieces garlic
  12. 1/2 Tbsp mustard seeds
  13. 1 cup milk
  14. 1/2 tsp asafoetida (Heeng)
  15. 2 whole green chillies
METHOD FOR PREPARATION :-
  • Clean and cut all the vegetables, keep the lady fingers large with one slit
  • Boil all the veggies in a cooker with some water. Let it sit for 2 whistles
  • Heat a pan with some oil and add the phoran. When they crackle add the green chillies, garlic and tomatoes
  • Saute it and add some salt. Add the boiled vegetables into this and bring it to boil
  • Remove and serve hot.

4. Chakuli Pitha (ଚକୁଳି ପିଠା)

Chakuli Pitha, a cereal based steamed food, which is a very favorite food like other dishes of Odisha.

INGREDIENTS :-
  1. 1 cup Urad Dal/Split Black Gram
  2. 2 cup Rice
  3. Salt as per taste
  4. Water as required
  5. Cooking Oil as required
METHOD FOR PREPARATION :-
  • Wash and soak urad dal and rice in water overnight. Then filter out the extra water and grind it to make a fine paste. Add the rice and urad with just as required water. Save the extra water.
  • Slowly add water as required to make a smooth batter.
  • Keep aside the mixture for 4 to 5 hours for fermentation.
  • Add salt and water to the paste for making the batter a little thin. Make sure the batter doesn’t get too watery.
  • This is the regular method of making, however, what’s also suggested is that you can make the pithas after 30 minutes of grinding and fermentation
Making the Pithas
  • Heat a nonstick tawa on a medium flame.
  • When the pan gets heated, grease well with oil.
  • Take a ladleful of batter and spread it all over the pan in a circular shape.
  • After a while, check the lower side of the pitha. Once the lower side turns brownish, flip it to the other side.
  • When the pitha is cooked well from both sides, switch off the stove. Repeat the procedure for all the pithas.
  • Serve hot with Aloo Bhaja, Ghuguni, and Jaggery on sides.

  • 1 cup plain  flour
  • 2 tbsp clarified butter
  • ¼ cup water
  • oil for deep frying
FOR SUGAR SYRUP:
  1. 1½ cup sugar
  2. ¼ cup water
  3. ¼ tsp cardamom powder
  4. 1 tsp lemon juice
METHOD FOR PREPARATION :-
  • Combine, flour baking powder, salt and ghee, rubbing the ghee in by short crust method to form a crumb sort of texture, use water as required lightly, and knead into a stiff dough like a biscuit.
  • Cover and let rest for 10 minutes.
  • Roll out and divide the dough in 12 small round balls.
  • Further divide each dough in to 3 parts.
  • Roll out each small dough like a puri, apply ghee and stack the three puris one top of another.
  • Roll out the stacks like a kathi roll, cut in to two and flatten.
  • Once flattened, they are ready to be fried in oil till golden.
  • Immerse the fried madata’s in the sugar syrup, sprinkle cardamom powder.
  • Take out of sugar syrup, allow to dry and store in air tight containers.
