1.About this recipe

Hyderabadi chicken Biryani is a popular recipe made with rice chicken and a whole lot of spices. Hyderabadi Biryani have it’s unique taste and influences from different parts of the world, especially from the Mughals.

2.Ingredients for Hyderabadi special biryani

For the rice-

  • 3 cup Basmati rice
  • 1 tsp Shahi jeera
  • 2 Black Cardamom
  • 2-3 Green Cardamom
  • 2 Javitri
  • 3-4 Cloves
  • 1 tsp Cumin Seeds
  • 5 Black Peppercorns
  • 2 Bay Leaf
  • 2 Inch Cinnamon
  • 2 tsp Ginger Garlic Paste
  • 2 tsp Green Chili Paste
  • 4 tsp Salt
  • 2-3 drop Kewra Essence

For the chicken-

  • 500 g Chicken
  • 1 tsp Shahi Jeera
  • 2 tsp Ghee
  • 4 tsp Ginger Garlic Paste
  • 1/2 tsp Garam Masala Powder
  • 1/2 tsp Coriander Powder
  • 1/2 tsp Cumin Powder
  • 2 tsp Red Chili Powder
  • 1 tsp Turmeric Powder
  • 2 tsp Salt
  • 2 tbsp Vegetable Oil
  • 2 tsp Chopped Green Chili
  • 2 tbsp Lemon Juice
  • 200 g Curd
  • 2 tbsp Chopped Mint
  • 2 tbsp Chopped Coriander
  • 1/4 Cup Fried Onion

For the Biryani-

  • 1/2 Cup Milk
  • 8-10 Saffron (soaked in water/milk)
  • 1/2 Cup Golden Fried Onion
  • 3 tbsp Ghee

For the Garnishing-

  • Boiled Egg
  • Sliced carrot
  • Cucumber

Key Ingredients : chicken, salt, ginger garlic paste, red and green chili paste, cumin seeds, cloves, curd, butter and semi cooked rice, Ghee, Fried Onion.

3.Step by step Recipe

1- Take a bowl and add chicken, cumin seeds (jeera), Ghee, ginger garlic paste, garam masala powder, red and green chili paste, turmeric powder, salt, lemon juice mix it well and marinate the chicken for 10-12 hours. Add yogurt, mint, coriander and golden fried onion in the marinated chicken and mix well.

2- Wash the rice and soak in water for 30 minutes. Take a large pot and heat water add black cadomam, green cardamom, javitri, cloves, cumin seeds, black peppercorn, star anise, cinnamon, bay leaf, ginger garlic paste, green chili paste, kewra essence, lemon juice and salt in the pot and bring the water boil.

3-When the water fully boiled then Drain the rice and add it in the boiling water, Transfer the marinade chicken in a heavy bottom pan. When the rice get 70% cooked take it out, Once the rice is over cooked then your biryani didn’t gives you the same flavor.

4- Take it out the semi cooked rice and 50% of rice spread in the first layer over the heavy bottom pan, in the second layer spread chicken perfectly then the rest rice spread all over the chicken in third layer sprinkle 1/2 cup milk, soaked saffron, golden brown onion and ghee on top, cover the pot tightly with a lid.

5- Place the pot in high heat and hook for 5 minutes, then the pot placed in low-medium flame and cook the Biryani for 30-35 minutes. Remove the lid and mix the Biryani gently and Hyderabadi Special Biryani is Ready.

4.Serving suggestion

When Biryani is ready it can be served with any Raita of your choices like common raita, mint raita, onion tomato raita, Bondi raita and Garnish with boiled egg, sliced carrot and cucumber.
