How to Make Falooda- A Sweet Summer Delicacy

Falooda is a summer dessert recipe that is made by layering various elements like sweet basil seeds, vermicelli, rose syrup and topped with chilled milk and ice cream. You can consider it as a drink or a dessert. It is loved by everyone starting from kids to adults for its creamy taste and flavor. Sip it or drink it, you are going to enjoy every part of it!!!

The Story of Falooda

Falooda is a layered dessert in a glass having its origin in Iran. This summer drink has penetrated into may countries like India, Pakistan, Middle East, Bangladesh, Myanmar (Burma) and Turkey. This recipe has variety of flavors like saffron, pista, mango, strawberry, chocolate, rabri etc. The basic falooda recipe is layered with basil seeds, vermicelli, chilled thick milk topped with ice cream and nuts.
Let’s get started with the basic one.

Ingredients for Basic Falooda

  • Basil seeds/sabja/falooda seeds-1 tbsp
  • Milk-2 cups
  • Sugar-2 tbsp
  • Falooda sev-half cup
  • Rose syrup or Roohafza-2 tbsp
  • Vanilla Icecream-2 scoops
  • Jelly-1 tbsp

How to make Basic Falooda

1.Prepare the Milk Mixture

Boil the milk and sugar and cornstarch in a deep-bottomed pan over medium flame and reduce it. Add 30 grams of rose syrup to the milk and mix well. Keep stirring at regular intervals to prevent the milk from burning and sticking to the bottom of the pan. Once it has thickened and reduced to half, take it off the flame. Allow to cool completely before refrigerating it.

2.Soak Falooda Seeds

Soak falooda seeds in water in a small bowl for 30-45 minutes. Allow them to bloom. The seeds will swell, soak up liquid and almost double in size.

3.Cook Falooda Sev

Boil the falooda noodles in sufficient water until soft. Drain all the water and rinse under cold water to stop them from cooking further. Keep submerged in cold water to prevent sticking until ready to use. If storing for longer, drain the water.

4.Make Jelly

Readymade sachets for making jelly are available in the market. Pour the contents of the packet into a mixing bowl. Add cold water and mix until crystals are dissolved. Then stir in the hot water and mix again. Cover and store in refrigerator until set.

5.Layer the Falooda and Serve

In a tall glass add 2 tbsp rose syrup or rooh afza. Further add soaked sabja seeds and cooked falooda sev. Pour 1 cup of chilled milk and stir gently. Drop 2 tbsp of jelly. Add in a scoop of vanilla ice cream.
Further top with 1 tsp of tutti frutti, 1 tsp chopped nuts. Drizzle 1 tbsp of rooh afza and top with a cherry(OPTIONAL)

ROSE FALOODA

There are different ways of serving the falooda. You can make it heavy by adding condensed or thick milk. Some like it with sprinkles and choco chips. Adding food colour also gives a nice look to the recipe. Add or reduce ingredients as per your taste. If are a fruit lover, definitely add your favorite fruits in the topping.
